Potato and Peas Curry or Aloo Matar; another Indian curry Europefied! I can’t help it; India just is the best in turning some basic cheap ingredients into something mouthwatering! Those are in this case the Aloo (potato) and Matar (peas).
This Potato and Peas Curry might be the last in a beauty contest but it tastes delicious! In India a curry like this would be eaten with rice since potato is more seen as a vegetable. WhereI live potato is solely seen as the carb base of a meal so I left the rice out this time.
WARNING: This recipe contains egg which doesn’t get cooked through fully. This means it could contain salmonella. Consuming raw egg is not adviced for children under 5 years old, pregnant people, elderly, or any immunocompromised person.
Budget-tips:
- I like to use some Madame Jeanette/Adjuma pepper in this dish. A scotch bonnet will do too. But I rarely get it finished before it wilts away. That why I freeze my peppers so I can just break a piece off when I need it.
- Leftovers you can use: cauliflower, bellpeppers, onion, coriandre, parsley, cooked egg.
Tips for big eaters:
- Like mentioned before; you could add some rice.
- You can also choose to add 2 more potatoes and a big hand of peas.
Other tips:
- I use the 2% Greek yoghurt because it is healthier.
- This also tastes great with papadums, a chunk of Turkish bread or in a wrap.
- You can also add some apple or raisins.
