Potato and Cauliflower Curry or Aloo Gobi, Aloo gobhi or alu gobi is a healthy curry dish from India that excists of Aloo (potato) and Gobi (cauliflower). 2 ingredients that grow on trees where I live.

For real curry’s you need to be in India. Although potato and cauliflower are really budget-friendly for me; a lot of the spices used in India are not! This is a toned down version with a ready-to-go spice mix; but still tastes great though!

Budget-tips:

  • You can eat the leaves and hard bottom part of the cauliflower too. A curry stew like this is a great way to use them so you can keep the nice flower parts for a different meal.
  • leftovers you can use in this meal; peas, green beans, coriandre, bell peppers, chicken- or beef.

Tips for big stomachs:

  • Add a extra potato and half hand of rice per big eater.

Other tips:

  • You can also use other curry spices. If you use one with turmeric in it then leave the one mentioned seperately out.
  • This goes great with some fresh cucumber.
  • You can also eat this with some nice bread or papadums instead of rice.
  • If you like spicy; this is a great dish for some peppers!

Ingredients

  • 220 gr potato

  • 450 gr cauliflower

  • 2 tomatoes

  • 150 gr rice

  • 1 onion

  • 2 eggs

  • 1 teaspoon garam masala

  • 75 gram Greek or Turkish yoghurt

  • 2 cloves of garlic

  • 1 teaspoon dried turmeric

  • Salt to taste

  • 1 tablespoon sunflower oil

Directions

  • Peel the potatoes and dice them. Cut the cauliflower in chunks, the onion in pieces and the garlic in slices.
  • Cook the potatoes and cauliflower in 1 pan. To save on dishes you can also cook the eggs in there. Cook the rice seperately.
  • Brown the onion and garlic in the oil and add the cooked potatoes and cauliflower. If these start to brown a tad add the salt, turmeric en garam masala. Toss well.
  • Add the yoghurt and tomatoes in pieces. You can choose if you like the tomatoes well done or more raw.
  • Serve with the rice and eggs.
