Toast Pizza Mushrooms €1,38

Toast Pizza Mushrooms is actually just a luxurious sandwich. I don’t know about you; but I was nót amused if my parents decided to eat bread for dinner when I was young. That was too beneath this snobby little child.

Now I am old & poor & busy I understand better why adults sometimes choose bread for dinner. But I still dislike a cold sandwich in the evening though! Especially in the winter!

Toast Pizza Mushroom is a great solution for this problem. Any Toast Pizza. They are quick to prepare, cheap and you still have the idea you are eating something more special than a jelly sandwich. It is also more nutritious!

Budget-tips:

• Since bread is being toasted for this recipe (which is not mandatory by the way) it is ideal to use up your old stale bread.
• Leftovers you can add: Bell pepper, corn, onion, chives, basil and several leftover meats.

Tips for big eaters:

• You could use 4 slices of bread instead of 2. The spread gets thinner then ofcourse.
• You could just double the whole recipe.
• You could just east a sandwich, some yoghurt or an apple or something after it.

Other tips:

• You can add some chili (flakes) or hot sauces for some heat.
• Grate some cheese over it and put it a few minutes under the grill is also really tasty.
• You could also add some chorizo.

Ingredients

• 1 spring onion

• 1 clove of garlic

• 1 can of mushrooms (290 grams)

• 70 grams of tomatopuree

• 2 slices of bread

• Salt & Pepper to taste

Directions

• Cut the spring onion and garlic in pieces and drain the can of mushrooms.
• Toast the bread in an oven or a toaster.
• Cook de spring onion and garlic in a few tablespoon of water or bake them in an oil or fat.
• Add the mushrooms, salt, pepper and the tomatopuree. If it is too dry add a tablespoon of water.
• Put the tomato-mushrooms spread on the toast. Enjoy!
