Potato and Cauliflower Curry or Aloo Gobi, Aloo gobhi or alu gobi is a healthy curry dish from India that excists of Aloo (potato) and Gobi (cauliflower). 2 ingredients that grow on trees where I live.
For real curry’s you need to be in India. Although potato and cauliflower are really budget-friendly for me; a lot of the spices used in India are not! This is a toned down version with a ready-to-go spice mix; but still tastes great though!

Budget-tips:
- You can eat the leaves and hard bottom part of the cauliflower too. A curry stew like this is a great way to use them so you can keep the nice flower parts for a different meal.
- leftovers you can use in this meal; peas, green beans, coriandre, bell peppers, chicken- or beef.
Tips for big stomachs:
- Add a extra potato and half hand of rice per big eater.
Other tips:
- You can also use other curry spices. If you use one with turmeric in it then leave the one mentioned seperately out.
- This goes great with some fresh cucumber.
- You can also eat this with some nice bread or papadums instead of rice.
- If you like spicy; this is a great dish for some peppers!
